Simple Brisquetta Cooking Instructions – Ninja Woodfire

1. Preheat Your Grill:
– Set your Ninja Woodfire to the smoke setting and preheat to 120ºC (250ºF).
2. Prepare the Brisquetta:
– Season the Brisquetta as desired with your favourite rub or marinade.
– Place the Brisquetta directly on the grill grates.
3. Smoking Process:
– Close the lid and smoke the Brisquetta at 120ºC (250ºF) for approximately 3 hours.
– During this time, allow the smoke to infuse the meat, enhancing its flavors.
4. Check Internal Temperature:
– Begin checking the internal temperature of the Brisquetta after 2.5 hours.
– Continue cooking until the Brisquetta reaches an internal temperature of 98ºC (208ºF) and probes tender. This means a meat probe or fork should slide in with minimal resistance.
5. Remove and Wrap:
– Once the desired internal temperature is achieved, carefully remove the Brisquetta from the grill.
– Wrap the Brisquetta tightly in butcher paper or aluminum foil to retain moisture.
6. Resting Period:
– Place the wrapped Brisquetta in an insulated box (such as a cooler) and let it rest for at least 2 hours. This resting time is crucial as it allows the juices to redistribute, ensuring a tender and juicy final product.
7. Serving:
– After resting, unwrap the Brisquetta and slice it against the grain for optimal tenderness.
– Serve and enjoy your perfectly smoked, tender Brisquetta!
