Cooking Tips

Cooking Guidelines:

*These are guideline instructions based on 600g Beef Wellington – timings may differ depending on actual oven temps and larger / smaller cuts. Please use a temperature probe to ensure a successful cook is achieved.

  1. Defrost: Begin by defrosting the Beef Wellington in the fridge overnight.
  2. Preheat: Set your oven to 190°C (375°F).
  3. Prepare: Remove the Beef Wellington from all packaging and its foil tray. Place it on a baking tray preferably with baking paper for easy transfer after cooking.
  4. Egg Wash: Lightly brush the pastry with an egg wash to achieve a golden, crispy finish.
  5. Bake: Oven bake for *45-50 minutes. For a perfect medium-rare finish, use a meat probe to check that the internal temperature of the fillet reaches 55°C (131°F). Cook to your preferred doneness.
  6. Rest: Once baked, remove the Wellington from the oven and allow it to rest for at least 10 minutes before slicing and serving.

PERSONAL NOTE: When cooking I recommend using a thermometer to gain the correct internal temperature. If, like me you like it nice and pink, then cooking to about 50ºC is about right and allow to rest for 10-20 minutes before cutting. This give the meat time to relax and retain the juices but will also allow the meat to rise in temperature by about 5ºC during this time. Perfect!
