Simple Brisquetta Cooking Instructions – Ninja Woodfire

NOTE: Although the following guidelines have been produced for cooking on the Ninja Woodfire, hundreds of people have had amazing experiences by following the same principals on open fire ranges and barbecues of varying design.

1. Preheat Your Grill:
– Set your Ninja Woodfire to the smoke setting and preheat to 120ºC (250ºF).

2. Prepare the Brisquetta:
– Season the Brisquetta as desired with your favourite rub or marinade.
– Place the Brisquetta directly on the grill grates.

3. Smoking Process:
– Close the lid and smoke the Brisquetta at 120ºC (250ºF) for approximately 3 hours.
– During this time, allow the smoke to infuse the meat, enhancing its flavors.

4. Check Internal Temperature:
– Begin checking the internal temperature of the Brisquetta after 2.5 hours.
– Continue cooking until the Brisquetta reaches an internal temperature of 98ºC (208ºF) and probes tender. This means a meat probe or fork should slide in with minimal resistance.

5. Remove and Wrap:
– Once the desired internal temperature is achieved, carefully remove the Brisquetta from the grill.
– Wrap the Brisquetta tightly in butcher paper or aluminum foil to retain moisture.

6. Resting Period:
– Place the wrapped Brisquetta in an insulated box (such as a cooler) and let it rest for at least 2 hours. This resting time is crucial as it allows the juices to redistribute, ensuring a tender and juicy final product.

7. Serving:
– After resting, unwrap the Brisquetta and slice it against the grain for optimal tenderness.
– Serve and enjoy your perfectly smoked, tender Brisquetta!

    Having bought a few of the non wagyu version last year, and moving to brisquetta from tri-tip, all I can say is wow.
    This is my first ever wagyu meat and it was simply amazing, i could not believe the difference, it is not just minor, it is huge, the meat was a whole different level of tender, soft and juicy, my whole family loved it, and will 100% buy another one next week before they sell out.
    Followed the instruction above, but my one cooked for nearly 4 hours, but it was 1.6kg, same a last time, used a binder then fools good by A&O.
    Honestly, try one it was great.
