These Chuck Roasts are big and very meaty.. Like a Beef alternative to a Pork Boston Butt. The ones on here right now are from some fairly large animals so we’ve tied them up to make a nice roast – you could of course remove the strings which will reduce the cooking time and increase the surface area to encourage more caramelisation and textures to your finished product. However, the next batch will be from smaller selected animals, whole pieces that won’t need tying. They’re a long slow cook that will take time to break down but the end results can be quite extraordinary. When shedded and there’s still some leftovers – portion and freeze, this is fabulous to bring out and fry off in a skillet with whatever wondrous spices you have lurking about in the cupboard. This is ‘Black Rock Mountain’ Heritage Angus and Hereford Beef from the foothills of Black Rock Mountain, Ireland. To put this quite simply, this is superior, hand selected beef from an area locally known as “The Model County” famous for its nutrient rich soil and temperate climate, ideally suited to grazing and the production of high quality, traditional grass fed beef.
