Information

Situated in the idyllic Irish countryside, near the medieval hub of Kilkenny city, is Ballykeefe Distillery. Home to the Gings family where they meticulously craft an array of super-premium spirits within their environmentally friendly on-farm distillery. As custodians, they deeply embrace their roles, overseeing both farm and distillery operations with aspirations is to pass on the farm to future generations as a more sustainable enterprise than when they initially started farming in Ballykeefe.

At Ballykeefe, barley cultivation is a fundamental aspect of their family farm, located in the captivating Kilkenny countryside. This holds immense importance for them, as it allows assurance of the highest quality of grain required for their on-site distillery. Once the barley reaches its optimal ripeness, it is carefully harvested, where the resulting straw from the harvest serves as bedding for their cattle during the winter months. Additionally, they ensure that the by-products of grain distillation is utilised as feed for their livestock, leaving no room for off-farm waste to impact the environment negatively.

The remarkable outcome of this conscientious approach demonstrates a steadfast commitment to environmental inclusion within a circular economy. Precisely the way farming should be done thus appreciating each and every aspect of production from our natures larder. This commitment leads to a well-attended beef cattle herd, ensuring exceptional beef quality, alongside an extraordinary range of highly acclaimed spirits.
