Description
When it comes to value for money these bad-boys are an excellent option. Personally I’d eat these over many other cuts that cost much more. We cut these to 1.5″ in thickness and pack them two per pack. The extra thickness allows you to cook to the right temperature without overcooking. We like them still pink in the middle – medium / rare. Another option with the thickness is to make a pocket which can be stuffed with all sorts of variations.

Cooked these in a sous vide to medium, chilled them down in an ice bath to rare, patted them down to dry off and finished over a ripping hot bbq, some of the best pork I’ve ever eaten, highly recommended these
